Zucchini Fritters made in a Thermomix

This is my independent Thermomix homage to Stephanie Alexander and the comforting appeal of zucchini fritters. It keeps the spirit of the original inspiration, but the method is written fresh for TM6 and TM7 cooks who want clear settings and a warm, achievable result.

Ingredients

Thermomix method

  1. Grate the zucchini 4 sec / speed 5, then squeeze out the liquid well. Chop the spring onions and herbs 3 sec / speed 5.
  2. Return the zucchini to the bowl with the feta, eggs, flour, salt and pepper. Mix 8 sec / Reverse / speed 3 to a batter.
  3. Cook spoonfuls in a hot oiled pan, 2–3 minutes each side, until golden. (Pan finish.)

Aly's tips

  • Squeezing the zucchini dry is the secret to crisp, not soggy, fritters.
  • Serve with yoghurt and lemon.

Yes — 200°C for 18–20 minutes, turning once.
