White Bean Minestrone

Inspired by Anna Del ConteMy Thermomix reimagining of their minestrone
My Thermomix take on Anna Del Conte's minestrone — a hearty Italian vegetable and white bean soup.
This is my independent Thermomix homage to Anna Del Conte and the comforting appeal of minestrone. It keeps the spirit of the original inspiration, but the method is written fresh for TM6 and TM7 cooks who want clear settings and a warm, achievable result.
Ingredients
- 🧅1 onion, halved
- 🧄2 garlic cloves
- 🥕1 carrot
- 🥄1 celery stick
- 🫒30 g olive oil
- 🍅400 g chopped tomatoes
- 🫘1 x 400 g tin cannellini beans, drained
- 💧700 g stock
- 🍝60 g small pasta
- 🧀Parmesan, basil
Thermomix method
- Chop onion, garlic, carrot and celery 5 sec / speed 5. Add oil, sauté 5 min / 120°C / speed 1.
- Add the tomatoes, beans and stock. Cook 12 min / 100°C / Reverse / speed 1.
- Add the pasta and cook 8 min / 100°C / Reverse / speed 1 until tender. Season, finish with parmesan and basil.
Aly's tips
- A parmesan rind simmered in adds beautiful depth.
- Mash a few beans to thicken the broth.
