My Thermomix version of Jamie Oliver's veg-packed Bolognese — a rich, sneaky-healthy ragù in one bowl.

Veg-Packed Bolognese made in a Thermomix

Jamie's trick is a proper soffritto base and a sauce packed with veg the kids never notice. The Thermomix chops the lot and cooks it all in one bowl — just boil your pasta while it simmers.

Ingredients

Thermomix method

  1. Place onion, garlic, carrot and celery in the mixing bowl and chop 5 sec / speed 5. Scrape down.
  2. Add the olive oil and pancetta and sauté 4 min / 120°C / speed 1.
  3. Add the beef mince and cook 6 min / 100°C / Reverse / speed 1 to brown, breaking it up.
  4. Add the red wine and cook 3 min / 100°C / Reverse / speed 1.
  5. Add the passata, tomato paste, oregano, bay leaf, salt and pepper. Cook 30 min / 100°C / Reverse / speed 1, with the measuring cup off and the simmering basket on the lid to stop splatter.
  6. Check the seasoning, remove the bay leaf and serve over pasta with plenty of parmesan.

Aly's tips

  • The onion-carrot-celery soffritto is what gives it that slow-cooked depth.
  • Double the batch and freeze half — it's even better the next day.
  • Stir a parmesan rind in at step 5 for extra savouriness, then remove before serving.

Questions

Can I make Bolognese entirely in the Thermomix?

Yes — it chops the veg, browns the mince on Reverse and simmers the sauce, all in one bowl. You only need to cook the pasta separately.

How do I hide vegetables in the sauce?

Chopping the carrot and celery finely with the onion melts them into the ragù, so they add sweetness and nutrition without anyone spotting them.
