Vanilla Berry Compote

Inspired by Donna HayMy Thermomix reimagining of their berry compote
My Thermomix take on a Donna Hay-style berry compote — glossy vanilla berries for yoghurt, pancakes or cake.
This is my independent Thermomix homage to Donna Hay and the comforting appeal of berry compote. It keeps the spirit of the original inspiration, but the method is written fresh for TM6 and TM7 cooks who want clear settings and a warm, achievable result.
Ingredients
- 🥄400 g mixed berries (fresh or frozen)
- 🍬60 g sugar
- 🌼1 tsp vanilla paste
- 🍋Juice of 1/2 lemon
- 🌽1 tsp cornflour (optional)
Thermomix method
- Add berries, sugar, vanilla and lemon juice to the mixing bowl. Stir 8 sec / 0°C / Reverse / speed 1 to coat the fruit.
- Cook 10 min / 90°C / Reverse / speed 1, MC off, until juicy and fragrant.
- For a thicker compote, add cornflour slaked in a little water and cook 2 min / 90°C / Reverse / speed 1.
- Cool 10 min / 0°C / no speed before spooning over yoghurt, pancakes or custard.
Aly's tips
- Reverse blade keeps the berries whole and pretty.
- Spoon over yoghurt, ice cream, pancakes or the Nigella chocolate cake.
