Tomato & Butter Pasta made in a Thermomix

This is my independent Thermomix homage to Marcella Hazan and the comforting appeal of tomato pasta sauce. It keeps the spirit of the original inspiration, but the method is written fresh for TM6 and TM7 cooks who want clear settings and a warm, achievable result.

Ingredients

Thermomix method

  1. Add tomatoes, halved onion, butter and salt to the mixing bowl. Stir 8 sec / 0°C / Reverse / speed 1 to settle everything around the blades.
  2. Cook 28 min / 100°C / Reverse / speed 1, MC off, until rich and glossy.
  3. Remove the onion halves, then crush the tomatoes 5 sec / 0°C / speed 4 for a rustic sauce.
  4. Toss through cooked spaghetti 1 min / 0°C / no speed with basil and parmesan.

Aly's tips

  • The onion flavours the sauce then comes out — Marcella's genius.
  • Don't rush the simmer; that's where the silkiness comes from.

Questions

Do I really remove the onion?

Yes — it gives sweetness, then you lift it out. (Or keep it, your call.)
