Thermomix Crispy Potatoes made in a Thermomix

This is Chef Aly's independent Thermomix homage to J. Kenji López-Alt's crispy potatoes. The Thermomix prepares the aromatic seasoning, while the oven delivers crunchy edges and fluffy centres.

Ingredients

Thermomix method

  1. Preheat the oven to 220°C oven / no speed. Place the chicken breast-side up in a roasting tin.
  2. Add garlic, thyme, parsley, salt, pepper and butter to the mixing bowl. Chop and mix 10 sec / speed 6.
  3. Rub the herb butter over the chicken and place the lemon halves inside the cavity. Roast 20 min / 220°C oven / no speed, then reduce to 190°C oven / no speed and roast for 45 min / 190°C oven / no speed, or until cooked through.
  4. Transfer the chicken to a board and rest 15 min / 0°C / speed 0. Pour the roasting juices into the mixing bowl with the stock and wine.
  5. Cook the sauce 8 min / 100°C / speed 2. Add the cornflour mixture and cook 2 min / 100°C / speed 2, then season to taste.
  6. Carve the chicken and serve with the warm sauce, spooning it over the slices.

Aly's tips

  • Pat the chicken thoroughly dry before adding the butter so the skin roasts evenly.
  • Use a meat thermometer in the thickest part of the thigh and rest the chicken before carving.

Questions

Can I prepare the herb butter ahead?
