These potatoes are all about contrast: fluffy centres, crisp edges and a bright lemony finish. The Thermomix makes the aromatic broth, then the oven turns it into a deeply savoury traybake.

Ingredients

Thermomix method

  1. Preheat the oven to 200°C oven / no speed. Arrange the halved potatoes cut-side down in a large roasting dish.
  2. Add the garlic, olive oil, lemon juice, lemon zest, stock, oregano, salt and pepper to the mixing bowl, then blend 10 sec / speed 6.
  3. Pour the lemon stock over the potatoes and roast 35 min / 200°C oven / no speed, until the liquid has reduced by half.
  4. Turn the potatoes and roast 15 min / 220°C oven / no speed, until golden and crisp at the edges.
  5. Rest the tray 5 min / 0°C / speed 0, then scatter with parsley and serve with the reduced lemon pan juices.

Aly's tips

  • Choose potatoes of a similar size so they finish cooking together.
  • For extra crisp edges, avoid crowding the roasting dish.
  • Taste the pan juices before serving and add another squeeze of lemon if needed.

Questions

Can I prepare these potatoes ahead?

Prepare the lemon stock and cut the potatoes several hours ahead, then combine and roast just before serving.

Can I use dried lemon zest?

Fresh zest gives the brightest flavour, but a small pinch of dried zest can be used in a pinch.
