My Thermomix take on a Curtis Stone-style sweetcorn chowder — creamy, sweet and comforting.
This is my independent Thermomix homage to Curtis Stone and the comforting appeal of corn chowder. It keeps the spirit of the original inspiration, but the method is written fresh for TM6 and TM7 cooks who want clear settings and a warm, achievable result.
Ingredients
- 🧅1 onion, halved
- 🧄2 garlic cloves
- 🧈30 g butter
- 🥔1 potato, cubed
- 🌽400 g sweetcorn kernels
- 💧600 g stock
- 🥛100 g cream
- 🫑Salt, pepper, chives
Thermomix method
- Chop onion and garlic 4 sec / speed 5. Add butter, sauté 3 min / 120°C / speed 1.
- Add the potato, sweetcorn and stock. Cook 18 min / 100°C / speed 1.
- Blend half (30 sec / speed 6) for a creamy-but-chunky chowder. Stir through cream, season, finish with chives.
Aly's tips
- Blending half keeps texture and body without flour.
- Crisp bacon on top is a lovely touch.
