Spiced Tomato Eggs
A Chef Aly Thermomix reinterpretation of Sohla El-Waylly-style spiced tomato eggs: tangy, fragrant, with metric ingredients and exact TM6 and TM7 times, temperatures and speeds for Australian home cooks.
Sohla El-Waylly's spiced tomato eggs are the kind of dish that turns a humble tin of tomatoes into something extraordinary — bright, warming and endlessly riffable. This Chef Aly Thermomix version keeps the bold spice and the runny yolks while making the method effortless with exact TM6 and TM7 settings.
Ingredients
- 🫒2 tbsp olive oil
- 🧅1 onion, quartered (about 150 g)
- 🧄3 garlic cloves
- 🌼1 tsp cumin seeds
- 🌼1 tsp smoked paprika
- 🌶️½ tsp chilli flakes
- 🍅400 g canned crushed tomatoes
- 🍬1 tsp sugar
- 🧂½ tsp salt
- 🥚4 eggs
- 🧀30 g feta, crumbled
- 🌿2 tbsp fresh coriander leaves, to serve
- 🌾Crusty bread, to serve
Thermomix method
- Place onion and garlic in the mixing bowl. Chop 5 sec / speed 5. Scrape down the sides.
- Add olive oil, cumin seeds, smoked paprika and chilli flakes. Sauté 3 min / 120°C / speed 1 until fragrant and onion is softened.
- Add crushed tomatoes, sugar and salt. Cook 10 min / 100°C / speed 2 until the sauce thickens and reduces slightly.
- Transfer the sauce to a large ovenproof dish or divide among 4 individual ramekins. Make 4 shallow wells in the sauce with the back of a spoon. Crack one egg into each well. Season the eggs with a pinch of salt.
- Bake in a preheated oven 10–12 min / 180°C oven / no speed until the egg whites are just set and the yolks are still runny.
- Scatter crumbled feta and fresh coriander over the top. Serve immediately with crusty bread for scooping.
Aly's tips
- The sauce can be made ahead and refrigerated for up to 3 days — just reheat, add eggs and bake when ready.
- Don't overbake the eggs. The yolks should still be liquid; they will carry on cooking in the residual heat.
- If you don't have an ovenproof dish, cover the Thermomix bowl (with sauce inside) with the Varoma dish, crack eggs into a lightly oiled Varoma tray, then steam 12 min / Varoma / speed 1.
Questions
Can I make Spiced Tomato Eggs in a Thermomix TM6 or TM7?
Yes. The Thermomix makes the sauce with exact temperature control, which is the key to great spiced tomato eggs. The eggs are either baked in the oven or steamed in the Varoma. Both models work identically for the sauce.
Can I add other vegetables to the sauce?
Absolutely. Diced capsicum (100 g) or a handful of spinach stirred in at the end work beautifully. Add capsicum with the onion at step 1 and wilt the spinach into the hot sauce just before adding the eggs.
