My Thermomix take on a Matt Preston-style spiced plum jam — deep, glossy and gently spiced.
This is my independent Thermomix homage to Matt Preston and the comforting appeal of plum jam. It keeps the spirit of the original inspiration, but the method is written fresh for TM6 and TM7 cooks who want clear settings and a warm, achievable result.
Ingredients
- 🥄700 g plums, stoned & chopped
- 🍬450 g sugar
- 🍋Juice of 1 lemon
- 🌼1 cinnamon stick
- 🥄2 star anise
Thermomix method
- Add the plums, sugar, lemon and spices to the bowl. Cook 5 min / 100°C / speed 1 to start.
- Cook 25 min / Varoma / Reverse / speed 1, MC off, until thick and jammy (around 105°C).
- Remove the spices, pour into warm sterilised jars and seal.
Aly's tips
- A squeeze of lemon helps the jam set.
- Star anise and cinnamon make it grown-up — lovely with cheese.

How long does it keep?
Sealed jars keep for months; refrigerate once opened.
