Inspired by Anna Del ConteMy Thermomix reimagining of their puttanesca
My Thermomix take on Anna Del Conte's puttanesca — a punchy tomato sauce with olives, capers and anchovy.
This is my independent Thermomix homage to Anna Del Conte and the comforting appeal of puttanesca. It keeps the spirit of the original inspiration, but the method is written fresh for TM6 and TM7 cooks who want clear settings and a warm, achievable result.
Ingredients
- 🧄3 garlic cloves
- 🥄3 anchovy fillets
- 🌶️1 tsp chilli flakes
- 🫒30 g olive oil
- 🍅700 g passata
- 🫒60 g black olives
- 🥄2 tbsp capers
- 🧂Salt
- 🍝300 g spaghetti, cooked
- 🌿Parsley
Thermomix method
- Chop garlic 3 sec / speed 6. Add anchovies, chilli and oil, sauté 3 min / 120°C / speed 1.
- Add passata, olives and capers. Cook 14 min / 100°C / Reverse / speed 1, MC off.
- Season, toss through the spaghetti with parsley.
Aly's tips
- The anchovy melts in — it's savoury depth, not fishiness.
- Capers and olives are salty, so taste before adding salt.
