My Thermomix take on Ottolenghi's famously silky hummus — the smoothest dip you'll ever make.

Silky Hummus made in a Thermomix

Ottolenghi's secret to glassy-smooth hummus is overcooked chickpeas and ice-cold water — and the Thermomix nails both. This is the version I make on repeat: rich, lemony and impossibly silky.

Ingredients

Thermomix method

  1. Place garlic in the mixing bowl and chop 3 sec / speed 7. Scrape down.
  2. Add the drained chickpeas, bicarbonate of soda and 600 g water. Cook 20 min / 100°C / speed 1 to soften the chickpeas right down, then drain and return the warm chickpeas to the bowl.
  3. Add tahini, lemon juice and salt. Blend 1 min / speed 8, scraping once.
  4. With the blades running on speed 6, pour the iced water through the lid and blend a further 30 sec / speed 7 until pale and silky.
  5. Spoon into a bowl, swirl with the back of a spoon, drizzle with olive oil and dust with paprika.

Aly's tips

  • Overcooked chickpeas + iced water is the whole trick to that silky texture.
  • Tins are easy, but soaked dried chickpeas give an even smoother result.
  • Keeps 4 days covered in the fridge — bring to room temp before serving.

Questions

How do you make hummus smooth in a Thermomix?

Soften the chickpeas further with bicarb soda, then blend hot with tahini and finish with iced water at speed 7 — the contrast is what makes it silky.

Can I use tinned chickpeas?

Yes. The extra 20-minute cook with bicarb softens tinned chickpeas enough for a smooth, Ottolenghi-style finish.
