Sesame Cucumber Noodles made in a Thermomix

This is my independent Thermomix homage to José Andrés and the comforting appeal of cold noodle salad. It keeps the spirit of the original inspiration, but the method is written fresh for TM6 and TM7 cooks who want clear settings and a warm, achievable result.

Ingredients

Thermomix method

  1. Place garlic in the mixing bowl and chop 3 sec / 0°C / speed 7. Scrape down.
  2. Add tahini, soy sauce, rice vinegar, sugar and sesame oil. Blend 15 sec / 0°C / speed 5 until smooth.
  3. Loosen with 30 g water and mix 8 sec / 0°C / speed 3 so the dressing coats noodles easily.
  4. Toss through cooled noodles and smashed cucumber 1 min / 0°C / no speed, then finish with sesame seeds and spring onion.

Aly's tips

  • Smash the cucumber so it drinks up the dressing.
  • A little chilli oil makes it sing.

This is best cold — rinse the noodles under cold water first.
