Roasted Carrot Hummus

Inspired by Yotam OttolenghiMy Thermomix reimagining of their carrot hummus
My Thermomix take on an Ottolenghi-style roasted carrot hummus — sweet, smoky and a gorgeous orange.
This is my independent Thermomix homage to Yotam Ottolenghi and the comforting appeal of carrot hummus. It keeps the spirit of the original inspiration, but the method is written fresh for TM6 and TM7 cooks who want clear settings and a warm, achievable result.
Ingredients
- 🥕400 g carrots, chopped
- 🧄1 garlic clove
- 🫘1 x 400 g tin chickpeas, drained
- 🥄80 g tahini
- 🍋60 g lemon juice
- 🌼1 tsp cumin
- 🫒40 g olive oil
- 🧂Salt
Thermomix method
- Steam the carrots: 500 g water in the bowl, carrots in the Varoma, 18 min / Varoma / speed 1 until very soft. Drain. Empty the bowl.
- Add garlic, chop 3 sec / speed 7. Add the carrots, chickpeas, tahini, lemon, cumin, olive oil and salt.
- Blend 1 min / speed 8, scraping, until silky. Loosen with a little water if thick.
Aly's tips
- Roasting the carrots first (200°C, 25 min) deepens the sweetness even more.
- A pinch of smoked paprika on top is gorgeous.

Yes — roast the carrots for a smokier, sweeter hummus.
