Roast Pumpkin Soup made in a Thermomix

Donna Hay's pumpkin soup is a winter staple — simple, silky and comforting. The Thermomix cooks the pumpkin and blends it smooth in the same bowl, so it's barely any work and barely any washing up.

Ingredients

Thermomix method

  1. Place onion and garlic in the mixing bowl and chop 4 sec / speed 5. Scrape down.
  2. Add the olive oil and sauté 3 min / 120°C / speed 1.
  3. Add the pumpkin, stock and nutmeg. Cook 20 min / 100°C / speed 1.
  4. Blend, increasing slowly 1 min / speed 4 to speed 9, until completely silky.
  5. Add the coconut milk or cream and mix 20 sec / speed 4. Season and serve topped with pumpkin seeds.

Aly's tips

  • For Donna's deeper flavour, roast the pumpkin at 200°C for 20 minutes first, then add at step 3 and cut the cook time to 10 minutes.
  • Coconut milk keeps it dairy-free; cream makes it richer.
  • A pinch of chilli or grated ginger with the onion is a lovely lift.
