Prawn Laksa made in a Thermomix

This is my independent Thermomix homage to Poh Ling Yeow and the comforting appeal of prawn laksa. It keeps the spirit of the original inspiration, but the method is written fresh for TM6 and TM7 cooks who want clear settings and a warm, achievable result.

Ingredients

Thermomix method

  1. Add onion, garlic, ginger, chilli, lemongrass and turmeric. Blend 8 sec / speed 8 to a paste, scrape.
  2. Add oil and fry the paste 5 min / 120°C / speed 1.
  3. Add coconut milk, stock and fish sauce. Cook 12 min / 100°C / speed 1. Add the prawns, cook 5 min / 90°C / Reverse / speed 1. Serve over noodles with sprouts, lime and coriander.

Aly's tips

  • Frying the paste is what builds the deep flavour.
  • Add tofu puffs for the authentic touch.
