Prawn & Chorizo Rice made in a Thermomix

Omar Allibhoy's Spanish cooking is all about bold flavours and simple technique. This Chef Aly Thermomix version of prawn and chorizo rice captures that smoky, golden comfort while making the method simple, metric and practical for TM6 and TM7 home cooks.

Ingredients

Thermomix method

  1. Place chorizo slices in the mixing bowl. Chop 5 sec / speed 5. Scrape down and add onion, garlic and red capsicum. Chop 5 sec / speed 5. Scrape down.
  2. Add olive oil and cook 5 min / 120°C / speed 1 to soften the vegetables and release the chorizo oils.
  3. Add smoked paprika, saffron threads and arborio rice. Stir 1 min / Reverse / speed 1 to toast the rice in the flavoured oil.
  4. Pour in the hot chicken stock and salt. Cook 16 min / 100°C / Reverse / speed soft, with the simmering basket on the lid instead of the MC to allow evaporation.
  5. Add prawns and frozen peas. Cook 5 min / 100°C / Reverse / speed soft, with the simmering basket on the lid, until prawns are pink and rice is tender.
  6. Rest 3 min / 0°C / no speed with the lid closed so the rice finishes absorbing liquid. Fluff gently with the spatula and serve with lemon wedges and parsley.

Aly's tips

  • Use hot stock straight from the kettle — cold stock shocks the rice and slows cooking.
  • If the rice needs another minute after the prawns go in, add 2 min / 100°C / Reverse / speed soft rather than stirring and breaking grains.
  • The saffron is optional but transforms the colour. A pinch goes a long way.

Questions

Can I make Prawn & Chorizo Rice in a Thermomix TM6 or TM7?

Yes. This version is written with exact Thermomix times, temperatures and speeds for both TM6 and TM7. The simmering basket on the lid allows evaporation, which is key for rice dishes.

Can I use bomba rice instead of arborio?

Yes. Bomba rice absorbs more liquid, so add an extra 100 g of stock and cook an additional 3 min at 100°C / Reverse / speed soft.
