My Thermomix take on Gordon Ramsay's peppercorn sauce — glossy, peppery and perfect over steak.
This is my independent Thermomix homage to Gordon Ramsay and the comforting appeal of pepper steak sauce. It keeps the spirit of the original inspiration, but the method is written fresh for TM6 and TM7 cooks who want clear settings and a warm, achievable result.
Ingredients
- 🧅1 shallot
- 🧈20 g butter
- 🌽1 tbsp crushed peppercorns
- 💧50 g brandy (or stock)
- 🥩150 g beef stock
- 🥛150 g cream
- 🥄1 tsp Dijon mustard
- 🧂Salt
Thermomix method
- Chop the shallot 3 sec / speed 6. Add butter and peppercorns, sauté 3 min / 120°C / speed 1.
- Add the brandy and stock, reduce 5 min / Varoma / speed 1, MC off.
- Add cream and mustard, cook 3 min / 90°C / speed 2 until glossy. Season.
Aly's tips
- Crush the peppercorns coarsely for bite.
- Spoon over steak, chicken or roast potatoes.

Swap the brandy for extra stock and a splash of vinegar.
