Peanut Noodle Salad made in a Thermomix

This is my independent Thermomix homage to David Chang and the comforting appeal of peanut noodles. It keeps the spirit of the original inspiration, but the method is written fresh for TM6 and TM7 cooks who want clear settings and a warm, achievable result.

Ingredients

Thermomix method

  1. Place ginger and garlic in the mixing bowl and chop 3 sec / 0°C / speed 7. Scrape down.
  2. Add peanut butter, soy sauce, rice vinegar, honey and warm water. Blend 20 sec / 0°C / speed 5 to a smooth dressing.
  3. Taste and balance with a splash more vinegar or water, then mix 8 sec / 0°C / speed 3.
  4. Toss through cooled noodles 1 min / 0°C / no speed with cucumber, crushed peanuts and coriander.

Aly's tips

  • Loosen the dressing with a little more water if thick.
  • Add shredded chicken to make it a meal.
