Pea Pesto Pasta made in a Thermomix

This is my independent Thermomix homage to Nigella Lawson and the comforting appeal of pea pesto pasta. It keeps the spirit of the original inspiration, but the method is written fresh for TM6 and TM7 cooks who want clear settings and a warm, achievable result.

Ingredients

Thermomix method

  1. Place parmesan, pine nuts and garlic in the mixing bowl and mill 8 sec / 0°C / speed 8. Scrape down.
  2. Add peas, herbs, olive oil and salt. Blend 20 sec / 0°C / speed 6 to a chunky, bright pesto.
  3. Add 60 g hot pasta water and mix 10 sec / 0°C / speed 3 to loosen the pesto.
  4. Toss through cooked pasta in a serving bowl 1 min / 0°C / no speed, adding a little more pasta water if needed.

Aly's tips

  • A little pasta water makes it glossy and helps it coat.
  • Lovely cold as a pasta salad too.

Raw or cooked peas?

Cooked (or thawed frozen) — blanch fresh peas 2 minutes first.
