Pea & Mint Risotto made in a Thermomix

This is my independent Thermomix homage to Nigel Slater and the comforting appeal of pea risotto. It keeps the spirit of the original inspiration, but the method is written fresh for TM6 and TM7 cooks who want clear settings and a warm, achievable result.

Ingredients

Thermomix method

  1. Chop onion 4 sec / speed 5. Add butter, sauté 3 min / 120°C / speed 1.
  2. Add rice and wine, cook 2 min / 100°C / Reverse / speed 1. Add stock, cook 14 min / 100°C / Reverse / speed 1, MC off.
  3. Add the peas and cook 3 min / 100°C / Reverse / speed 1. Stir through parmesan and chopped mint, season, rest 2 minutes.

Aly's tips

  • Add the peas late so they stay bright and sweet.
  • Mint at the very end keeps it fresh.
