Olive Oil Mashed Potato made in a Thermomix

This is my independent Thermomix homage to Massimo Bottura and the comforting appeal of mashed potato. It keeps the spirit of the original inspiration, but the method is written fresh for TM6 and TM7 cooks who want clear settings and a warm, achievable result.

Ingredients

Thermomix method

  1. Place 500 g water in the mixing bowl. Put potatoes and garlic in the Varoma and steam 25 min / Varoma / speed 1 until tender.
  2. Discard the water, fit the butterfly whisk, then add potatoes, garlic, olive oil, warm milk, salt and pepper to the bowl 1 min / 0°C / no speed.
  3. Whip 20 sec / 0°C / speed 3.5 until smooth and glossy — do not over-mix or the potato can turn gluey.
  4. Taste and adjust seasoning 10 sec / 0°C / Reverse / speed 1, then serve warm with a drizzle of olive oil.

Aly's tips

  • Olive oil instead of butter keeps it light and Italian.
  • Steaming (not boiling) keeps the potatoes from going watery.

Questions

Why not blend longer?

Over-working potato makes it sticky — a short mix keeps it fluffy.
