Mushroom Risotto made in a Thermomix

Stephanie Alexander's mushroom risotto is a masterclass in patience and restraint — let the rice do the work. This Chef Aly Thermomix version captures that creamy, earthy depth while making the method simple, metric and practical for TM6 and TM7 home cooks.

Ingredients

Thermomix method

  1. Place onion and garlic in the mixing bowl. Chop 5 sec / speed 5. Scrape down.
  2. Add butter and cook 3 min / 120°C / speed 2 to soften.
  3. Add mushrooms and cook 3 min / 120°C / Reverse / speed 1 to release their moisture.
  4. Add arborio rice and stir 2 min / 100°C / Reverse / speed 1 to toast the grains and coat in butter.
  5. Add white wine and cook 2 min / 100°C / Reverse / speed 1 until the wine is absorbed.
  6. Add hot vegetable stock and salt. Cook 18 min / 100°C / Reverse / speed soft, with the simmering basket on the lid instead of the measuring cup. Stir once halfway through with the spatula.
  7. Add parmesan and pepper. Stir gently with the spatula, then rest 2 min before serving. The risotto should be creamy and flow slightly — not stiff.

Aly's tips

  • The Thermomix makes risotto hands-free — no standing at the stove stirring. But do stir once at the halfway mark to prevent any rice sticking to the base.
  • Use a mix of mushrooms for depth. Swiss brown for earthiness, oyster for texture, shiitake for umami.
  • The risotto is ready when it flows like lava. If it's too thick, add a splash of hot water and stir.

Questions

Can I make Mushroom Risotto in a Thermomix TM6 or TM7?

Yes. The entire risotto cooks in the Thermomix bowl with Reverse stirring to keep the rice grains whole. Times and temperatures are exact for both models.

Can I use dried mushrooms?

Yes. Soak 20 g dried porcini in 150 g hot water for 10 min. Add the soaked mushrooms with the fresh ones, and use the soaking liquid as part of the stock.
