My Thermomix take on a Marco Pierre White-style mushroom barley soup — deep, earthy and nourishing.
This is my independent Thermomix homage to Marco Pierre White and the comforting appeal of mushroom soup. It keeps the spirit of the original inspiration, but the method is written fresh for TM6 and TM7 cooks who want clear settings and a warm, achievable result.
Ingredients
- 🧅1 onion, halved
- 🧄2 garlic cloves
- 🍄300 g mushrooms
- 🧈30 g butter
- 🥄100 g pearl barley
- 🥩800 g beef or vegetable stock
- 🌿1 tsp thyme
- 🫑Salt, pepper, parsley
Thermomix method
- Chop onion, garlic and mushrooms 5 sec / speed 5. Add butter, sauté 5 min / 120°C / speed 1.
- Add the barley, stock and thyme. Cook 30 min / 100°C / Reverse / speed 1, MC off, until the barley is tender.
- Season and finish with parsley.
Aly's tips
- Browning the mushrooms well is where the depth comes from.
- A splash of soy adds savoury richness.

Spelt or farro work; adjust the time to the packet.
