Mango Coconut Lassi made in a Thermomix

This is my independent Thermomix homage to Poh Ling Yeow and the comforting appeal of mango lassi. It keeps the spirit of the original inspiration, but the method is written fresh for TM6 and TM7 cooks who want clear settings and a warm, achievable result.

Ingredients

Thermomix method

  1. Place mango, yoghurt, coconut milk, honey and cardamom in the mixing bowl. Blend 30 sec / 0°C / speed 7.
  2. Scrape down, add a handful of ice if using, and blend 30 sec / 0°C / speed 9 until silky and cold.
  3. Pour over ice 1 min / 0°C / no speed and serve straight away with a tiny pinch of cardamom on top.

Aly's tips

  • Frozen mango makes it thick and frosty — skip the ice.
  • A squeeze of lime sharpens it beautifully.
