Lemon Ricotta Pasta made in a Thermomix

This is my independent Thermomix homage to Samin Nosrat and the comforting appeal of lemon ricotta pasta. It keeps the spirit of the original inspiration, but the method is written fresh for TM6 and TM7 cooks who want clear settings and a warm, achievable result.

Ingredients

Thermomix method

  1. Place parmesan in the mixing bowl and grate 8 sec / 0°C / speed 8. Scrape down.
  2. Add ricotta, lemon zest, lemon juice, olive oil, salt and pepper. Mix 20 sec / 0°C / speed 4 to a smooth sauce.
  3. Add 60 g hot pasta water and emulsify 10 sec / 0°C / speed 3 until glossy and loose enough to coat pasta.
  4. Toss through cooked pasta in a serving bowl 1 min / 0°C / no speed, then finish with basil and extra parmesan.

Aly's tips

  • A spoon of pasta water makes the sauce cling and gloss.
  • Add peas or rocket for colour.

No ricotta?

Mascarpone or cottage cheese (blended) both work.
