Inspired by Maggie BeerMy Thermomix reimagining of their roast chicken
My Thermomix take on a Maggie Beer-style lemon herb chicken — juicy chicken with a fragrant pan sauce.
This is my independent Thermomix homage to Maggie Beer and the comforting appeal of roast chicken. It keeps the spirit of the original inspiration, but the method is written fresh for TM6 and TM7 cooks who want clear settings and a warm, achievable result.
Ingredients
- 🧅1 onion, halved
- 🧄3 garlic cloves
- 🫒30 g olive oil
- 🍋1 lemon, zested + juiced
- 🌿Handful herbs (thyme, rosemary)
- 🍗600 g chicken thigh fillets
- 💧200 g stock
- 🫑Salt, pepper
Thermomix method
- Chop onion and garlic 4 sec / speed 5. Add oil, lemon zest and herbs, sauté 3 min / 120°C / speed 1.
- Add the chicken, stock and lemon juice. Cook 25 min / 100°C / Reverse / speed 1, MC off.
- Lift out the chicken; reduce the sauce 5 min / Varoma / Reverse / speed 1. Season and pour over. (For golden skin, finish thighs under the grill.)
Aly's tips
- Reduce the sauce at the end for real depth.
- Lovely over mash or with crusty bread.

Yes — add 10 minutes and make sure it reaches 75°C inside.
