Harissa Chickpea Stew made in a Thermomix

This independent Chef Aly Thermomix recipe takes inspiration from Nigella Lawson's generous, unfussy approach to comforting food. Harissa, tomatoes and chickpeas make a satisfying stew, while spinach and lemon keep the finish bright.

Ingredients

Thermomix method

  1. Place olive oil, onion, garlic and capsicum in the mixing bowl. Chop 5 sec / speed 5, then sauté 5 min / 120°C / speed 1.
  2. Add harissa paste and cook 1 min / 120°C / speed 1 so its spices bloom.
  3. Add crushed tomatoes, chickpeas and vegetable stock. Cook 18 min / 100°C / Reverse / speed 1, with the simmering basket in place of the measuring cup.
  4. Add spinach and lemon juice. Stir 2 min / 90°C / Reverse / speed 1 until the spinach wilts. Season with salt and pepper, then serve with yoghurt and coriander.

Aly's tips

  • Use mild or hot harissa to suit your preference.
  • Serve with couscous, warm flatbread or rice to make the stew go further.
