My Thermomix take on Maggie Beer's fig & vanilla jam — glossy, not too sweet, perfect with cheese.

Fig & Vanilla Jam made in a Thermomix

Maggie Beer is the queen of figs. This jam is jammy and grown-up — lovely on toast, but unbeatable next to a sharp cheese. The Thermomix stirs it for you so it never catches.

Ingredients

Thermomix method

  1. Place the figs, sugar, lemon juice and vanilla in the mixing bowl. Cook 5 min / 100°C / speed 1 to get it going.
  2. Cook 25 min / Varoma / Reverse / speed 1, MC off, until thick and jammy.
  3. Spoon into warm sterilised jars and seal.

Aly's tips

  • The lemon juice helps the jam set.
  • Beautiful with a sharp cheddar or on warm sourdough.

Questions

How long does the jam keep?

Sealed jars keep for months; once opened, about 3 weeks in the fridge.

Dried figs?

Use fresh for this — dried will be too dense.
