Inspired by Edna LewisMy Thermomix reimagining of their corn pudding
A Chef Aly Thermomix reinterpretation of Edna Lewis-style corn pudding, combining sweet corn, cream and eggs into a tender Southern-inspired side dish.
Edna Lewis celebrated the simple brilliance of fresh produce, and corn pudding is a beautiful example. This independent Chef Aly interpretation uses the Thermomix to make a smooth custard base before the oven gives it a softly set centre and golden top.
Ingredients
- 🌽500 g corn kernels, fresh or thawed
- 🥛250 g pouring cream
- 🥛150 g milk
- 🥚3 eggs
- 🧂30 g unsalted butter, melted
- 🌾25 g plain flour
- 🧂1 tsp fine salt
- 🫑1/2 tsp black pepper
- 🧅2 spring onions, sliced
Thermomix method
- Place 350 g of the corn, cream and milk in the mixing bowl. Blend 30 sec / speed 7 until mostly smooth.
- Add eggs, melted butter, flour, salt and pepper. Mix 20 sec / speed 4 until combined.
- Stir through the remaining corn and spring onions 10 sec / Reverse / speed 2.
- Pour into a buttered baking dish and bake in a preheated oven 40–45 min / 180°C oven / no speed, until softly set with a golden top.
- Rest the Corn Pudding 10 min / 0°C / speed 0 before spooning to the table.
Aly's tips
- Fresh corn gives the sweetest flavour, but thawed kernels work well too.
- The centre should still have a gentle wobble when the pudding comes out of the oven.
- Serve warm alongside roast vegetables or grilled chicken.
