Inspired by Bill GrangerMy Thermomix reimagining of their corn fritters
My Thermomix take on Bill Granger's famous corn fritters — golden, fluffy and packed with sweetcorn.
This is my independent Thermomix homage to Bill Granger and the comforting appeal of corn fritters. It keeps the spirit of the original inspiration, but the method is written fresh for TM6 and TM7 cooks who want clear settings and a warm, achievable result.
Ingredients
- 🥚2 eggs
- 🥛100 g milk
- 🌾100 g plain flour
- 🥄1 tsp baking powder
- 🌽300 g sweetcorn kernels
- 🧅2 spring onions
- 🫑Salt, pepper
- 🧈Butter, for cooking
Thermomix method
- Add the spring onions to the bowl, chop 3 sec / speed 5.
- Add eggs, milk, flour, baking powder, salt and pepper. Mix 15 sec / speed 4.
- Add the sweetcorn and mix 8 sec / Reverse / speed 3 to fold in. Cook spoonfuls in a buttered pan, 2 minutes each side.
Aly's tips
- Reverse blade folds the corn in without crushing it.
- Serve with avocado, bacon and a squeeze of lime.

Both work — thaw or drain well first.
