My Thermomix coconut pumpkin curry inspired by Madhur Jaffrey — golden, creamy and gently spiced.
This is my independent Thermomix homage to Madhur Jaffrey and the comforting appeal of pumpkin curry. It keeps the spirit of the original inspiration, but the method is written fresh for TM6 and TM7 cooks who want clear settings and a warm, achievable result.
Ingredients
- 🧅1 onion, halved
- 🧄3 garlic cloves
- 🫚20 g ginger
- 🫒30 g oil
- 🌼1 tbsp curry powder
- 🌼1 tsp turmeric
- 🎃700 g pumpkin, in 3 cm cubes
- 🥛400 g coconut milk
- 💧150 g stock
- 🥬100 g spinach
- 🧂Salt, lime
Thermomix method
- Chop onion, garlic and ginger 5 sec / speed 5. Add oil and spices, sauté 3 min / 120°C / speed 1.
- Add pumpkin, coconut milk and stock. Cook 20 min / 100°C / Reverse / speed 1, MC off.
- Stir through the spinach, cook 3 min / 100°C / Reverse / speed 1. Finish with salt and lime. Serve with rice.
Aly's tips
- Keep the pumpkin in even cubes so it cooks evenly on Reverse.
- Add a sliced chilli for heat.
