Cauliflower Cheese made in a Thermomix

This is my independent Thermomix homage to Gordon Ramsay and the comforting appeal of cauliflower cheese. It keeps the spirit of the original inspiration, but the method is written fresh for TM6 and TM7 cooks who want clear settings and a warm, achievable result.

Ingredients

Thermomix method

  1. Steam the cauliflower in the Varoma: add 500 g water to the bowl, florets in the Varoma dish, 18 min / Varoma / speed 1. Set aside in a baking dish.
  2. Empty the bowl. Grate the cheddar 8 sec / speed 8; set aside.
  3. Add butter, flour and milk. Cook 8 min / 90°C / speed 4 to a smooth white sauce.
  4. Add the cheese, mustard and nutmeg. Mix 20 sec / speed 4. Season, pour over the cauliflower and grill a few minutes to brown.

Aly's tips

  • Grating the cheese in the bowl keeps the sauce silky, never grainy.
  • Top with breadcrumbs before grilling for crunch.

Questions

Can I cook the cauliflower in the sauce?

Steam it first so it stays firm — boiling it in the sauce makes it watery.
