My Thermomix take on a Paul Hollywood-style onion tart — sweet caramelised onions on buttery pastry.
This is my independent Thermomix homage to Paul Hollywood and the comforting appeal of onion tart. It keeps the spirit of the original inspiration, but the method is written fresh for TM6 and TM7 cooks who want clear settings and a warm, achievable result.
Ingredients
- 🌾200 g plain flour
- 🧈120 g cold butter
- 🧂1 pinch salt
- 💧50 g cold water
- 🧅4 onions, sliced
- 🧅30 g butter (for onions)
- 🌿1 tsp thyme
- 🥄60 g gruyère, grated
Thermomix method
- Pastry: mix flour, cold butter and salt 8 sec / speed 6 to crumbs; add water, mix 10 sec / speed 5 to a dough. Chill 30 minutes.
- Onions: chop 3 sec / speed 4. Add butter and thyme, cook 18 min / 120°C / Reverse / speed 1, MC off, until soft and golden.
- Roll the pastry, spread the onions, scatter gruyère, and bake at 200°C for 30 minutes. (Oven bake.)

- Low and slow is the secret to sweet, jammy onions.
- A splash of balsamic at the end deepens them.

Can I use shop pastry?
Yes — but the Thermomix pastry is quick and far better.
