Butter Chicken made in a Thermomix

This is my independent Thermomix homage to Madhur Jaffrey and the comforting appeal of butter chicken. It keeps the spirit of the original inspiration, but the method is written fresh for TM6 and TM7 cooks who want clear settings and a warm, achievable result.

Ingredients

Thermomix method

  1. Chop onion, garlic and ginger 5 sec / speed 5. Scrape down.
  2. Add butter and spices and sauté 3 min / 120°C / speed 1.
  3. Add tomato paste, tomatoes and the diced chicken. Cook 20 min / 100°C / Reverse / speed 1, MC off.
  4. Add the cream and cook 3 min / 90°C / Reverse / speed 1. Season and finish with coriander. Serve with rice or naan.

Aly's tips

  • Thigh stays tender; add a pinch of sugar to round the tomatoes.
  • For extra silk, blend the sauce before adding the chicken.

Questions

Can I use chicken breast?

Yes, but dice it larger and add for the last 12 minutes so it doesn't dry out.

Is this the original Madhur Jaffrey recipe?

No. This is Chef Aly’s independent Thermomix reinterpretation inspired by Madhur Jaffrey and butter chicken; it is not endorsed by or affiliated with the chef.
