My Thermomix take on Jamie Oliver's broccoli orecchiette — garlicky, chilli-flecked and silky.
This is my independent Thermomix homage to Jamie Oliver and the comforting appeal of broccoli orecchiette. It keeps the spirit of the original inspiration, but the method is written fresh for TM6 and TM7 cooks who want clear settings and a warm, achievable result.
Ingredients
- 🧄3 garlic cloves
- 🌶️1 red chilli
- 🫒30 g olive oil
- 🥄2 anchovy fillets (optional)
- 🥦400 g broccoli, chopped
- 💧100 g vegetable stock
- 🧀Parmesan, to serve
- 🥄300 g orecchiette, cooked
Thermomix method
- Chop garlic and chilli 3 sec / speed 6. Add oil and anchovies, sauté 3 min / 120°C / speed 1.
- Add the broccoli and stock. Cook 12 min / 100°C / Reverse / speed 1 until very soft.
- Crush lightly with the spatula to a rough sauce, season. Toss through the cooked orecchiette with a splash of pasta water and parmesan.
Aly's tips
- Cooking the broccoli right down is the point — it becomes the sauce.
- A little reserved pasta water makes it glossy.
Questions
Can I leave out the anchovy?
Yes — add an extra pinch of salt and a little more parmesan.
