Banana Buttermilk Pancakes made in a Thermomix

This is my independent Thermomix homage to Stephanie Alexander and the comforting appeal of banana pancakes. It keeps the spirit of the original inspiration, but the method is written fresh for TM6 and TM7 cooks who want clear settings and a warm, achievable result.

Ingredients

Thermomix method

  1. Add the bananas, eggs and buttermilk. Mix 15 sec / speed 5.
  2. Add the flour, sugar and salt. Mix 15 sec / speed 4 to a smooth batter — don't overmix.
  3. Rest 5 minutes. Cook spoonfuls in a buttered pan, about 2 minutes each side, until golden. Serve with honey.

Aly's tips

  • The buttermilk is what makes them tall and fluffy.
  • Fold a handful of blueberries through at the end if you like.

Stir 1 tbsp lemon juice into 300 g milk and rest 5 minutes.
