Baked Ricotta with Figs

My Thermomix take on an Ottolenghi-style baked ricotta with honeyed figs — creamy, savoury-sweet, for sharing.
This is my independent Thermomix homage to Yotam Ottolenghi and the comforting appeal of baked ricotta with figs. It keeps the spirit of the original inspiration, but the method is written fresh for TM6 and TM7 cooks who want clear settings and a warm, achievable result.
Ingredients
- 🧀500 g ricotta
- 🥚2 eggs
- 🧀40 g parmesan, grated
- 🍋1 lemon, zested
- 🫑Salt and pepper
- 🥄6 figs, halved
- 🍯2 tbsp honey
- 🌿Thyme, to serve
Thermomix method
- Grate the parmesan 8 sec / speed 8. Add ricotta, eggs, lemon zest, salt and pepper. Mix 20 sec / speed 4.
- Spoon into an oiled dish and bake at 180°C for 25 minutes until just set. (The Thermomix makes the mix; baking is in your oven.)
- Top with the figs, drizzle with honey and scatter thyme. Serve warm with bread.
Aly's tips
- Drain wet ricotta first so it sets firm.
- Lovely with roasted grapes instead of figs.
