Apple Teacake

Stephanie Alexander is an Australian treasure. Her apple teacake is the kind of simple, buttery cake that fills the house with cinnamon. The Thermomix makes the batter in one bowl.
Ingredients
- 🧈125 g butter, soft
- 🍬150 g caster sugar
- 🥚2 eggs
- 🌾225 g self-raising flour
- 🥛100 g milk
- 🌼1 tsp vanilla
- 🍎1 apple, thinly sliced
- 🍬Butter, cinnamon and sugar, to top
Thermomix method
- Add butter, sugar, eggs, flour, milk and vanilla. Mix 25 sec / speed 5, scrape, then 10 sec / speed 4.
- Spoon into a lined round tin and smooth the top
- Arrange the apple slices over the top, brush with melted butter and dust with cinnamon sugar
- Bake in a preheated oven at 180°C for 35–40 minutes until golden and springy
Aly's tips
- Fan the apple slices over the top for that classic teacake look.
- Best warm, with a cup of tea — as intended.
